Healthy Cranberry Cookies (Late-Night Dessert, or Breakfast!)



My kindergartner wanted to bake cookies the other day, SO ... I used the Cinnamon Cranberry Confections ingredients:

1/3 c walnuts
1/4 c almonds
1/3 c raisins
1/8 c dried cranberries
1/4 tsp cinnamon
1/4 tsp salt
PLUS 1/2 c rolled oats, cooked with water, in the microwave.

Blend all ingredients -- mixture may be more coarse than for "Laraballs".
Scoop around 12-16 dollops on to baking sheet -- I love my silicone baking sheets!
Bake at 375 for 15-20 minutes.
My daughter added 2 chocolate chips to each cookie!

Yum!

THIS BATTER would also be an AWESOME breakfast!!! It is SO good, just as it is! Don't be afraid to have a lick -- nothing in it needs to be cooked! Have as much as you want -- it's all nutritious!!

By the way, the chocolate chip cookie dough from chocolatecoveredkatie.com was totally delicious baked in the microwave!! Also, I didn't measure, as I have mentioned before, it's totally freeing, saves time during and after cooking (less cleaning), and with my recipes, mostly you can't go wrong with quantities!

Ok, so back to the chocolate chip cookie dough, this is what I used:

a can of chickpeas, rinsed
about a cup of dates
milk, as needed
a little bit of salt
about a Tbsp of vanilla
a little bit of baking powder
semisweet chocolate chips

In a food processor, blend beans, dates, vanilla, salt, and some milk, until it looks like cookie dough. Add baking powder and mix just a bit more. Wait 15 min or so, refrigerate as desired. Add chocolate chips, mix for a few sec, and enjoy!

Try putting a scoop in a bowl and microwaving for 75 sec - awesome, warm, chocolate chip cookie in a flash!

By the way, it's so healthy, the little ones had some of this for dinner!

Get creative and I'm sure you could bake any of the Laraball recipes! It sure works for Cinnamon Crannbery Confections!
